4 Recipes We’re Obsessed With This Summer

We’ll take absolutely any reason to have a good search through some new recipes to try at home. Now summer is in full swing, it’s the perfect time to try some recipes we’ve had waiting for the sun to shine before we cracked out – so whether you’re looking for something new yourself, or just want to break out of your current food rotation, this is where you want to be.

Sriracha-Glazed Chicken Burger & Pickled Cabbage

Obviously, nothing beats a good old barbeque when the sun comes out, but if you haven’t got the open space or the interest in doing this, we’ve got a perfect alternative that you can do at home with no coal or smoke. The sriracha glaze on the chicken really makes it pop, and paired with the cabbage base, this is a super fresh and tasty meal that’s the perfect choice for a sunny day. Chuck some fries on the side, or a salad if you’re watching your calories, this is our current go-to meal.

Feta & Peach Couscous

Feta and fruit are one of our favourite combinations in summer, and this pairing is absolutely elite. You can use most flavours of couscous as your base, but we’ve found that lemon and garlic is the best one, offering a mild flavour that pairs with the feta without overpowering the other ingredients. This will take you about 15 minutes tops, so it’s great for a speedy meal after a long day. We like to add some mixed seeds for extra crunch, but you can also add some shredded chicken to this to pad it out, or even some chunks of watermelon to really make the feta pop. Add a drizzle of balsamic vinegar to that – wow, is all we can say.

Pasta Salad

A pasta salad is an instant go-to in our house, as it’s a great way to use up any veggies hanging around in the fridge in a tasty, simple way. Recently, we’ve been making this in advance and then having cold, and our typical go-to additions are cucumber, tomatoes, red onion, olives, crumbled feta, and some fresh basil. If we’ve got it in and we’re feeling it, sometimes we’ll throw some chicken in there too, along with a lemon-oil dressing. We’ve found with this that the pasta shape will either make or break this meal, so choose carefully – any penne fans out there, we promise you there are much more fun shapes that you need to get involved in ASAP.

Chocolate Hazelnut Ice Cream Sandwiches

The second we see a touch of sunlight, we’re instantly reaching for the ice cream. We just can’t help it, alright – and when this is on offer, can you really blame us? Ice cream sandwiches is a great throwback that we always enjoy, and these ones specifically are absolutely incredible. You cannot go wrong with a salted caramel ice cream, and when you pair that with chocolate cookies, you know you’re onto a winner. In a perfect world, you can bake the cookies for this recipe, but if you’re in a bit of a rush, or just not all that great in the baking department, this works just as well with shop-bought cookies.
