So, Pancake Day is around the corner (finally!) and what better way to celebrate this incredibly sweet day than indulging in pancakes? That’s why we’ve put together our favourite pancake recipe – it’s super simple, don’t worry – combined with plenty of topping recommendations, and even where you can get some pillowy goodness out in Newcastle if you really can’t be bothered to make them yourself. From sweet to savoury, budget to treat yourself, we’ve got everything covered for you to have the most perfect pancake day in 2024.
We’ve put together the best pancake recipe just for you so that you can serve up the best flipping pancakes you’ve ever tasted. No, we’re not kidding, they’re that good.
Oh and before we go any further, we’re talking about the superior crepe to the fluffy risen pancake inspired by our friends over in the USA, but if you do prefer a bounce with your stack, then don’t stress, we’ve got you covered too.
To start off, all you need is:
Then, all you have to do is follow these super quick and easy steps to make the perfect, fluffy pancakes:
STEP 1 - Add your flour, eggs and salt into a bowl and mix with the milk and oil until you have a smooth paste in your bowl.
STEP 2 - Add another good splash of milk and whisk to loosen the thick batter. While still whisking, pour in a steady stream of the remaining milk. Continue pouring and whisking until you have a thin batter.
STEP 3 - Heat the pan over medium heat and add oil via a kitchen towel to the pan.
STEP 4 - Ladle some batter into the pan, tilting the pan to move the mixture around for a thin and even layer.
STEP 5 - Leave to cook for about 30 seconds. If the pan is at the right temperature, the pancake should turn golden underneath after about 30 seconds and will be ready to flip to your heart’s content.
STEP 6 - Hold the pan handle and ease a knife under the pancake, then quickly lift and flip it over. Make sure the pancake is lying flat against the base of the pan with no folds, then cook for another 30 seconds before turning out onto a warm plate.
STEP 7 - Continue with the rest of the batter, serving them as you cook or stack onto a plate.
And voila – the perfect sweet treat.
Don’t worry pancake lovers, we’ve not forgotten about you. If you’d rather have something fluffier for your pancake day this year, then all you need to do is add 100g of extra flour and 15 grams of baking powder and you’ll be treated with American-inspired pancakes to fulfil your sweet (or savoury) fantasies.
Whether you like sweet or savoury, (we have a huge, sweet tooth as you probably know, but we do love both) we’ve put together the best toppings for you to follow up with on your devilishly good pancakes this pancake day.
For the perfect mix of sweet and savoury, we love the unreal combo of peanut butter and banana – something that ticks both boxes. With the strong taste of peanut butter compared to the sweet taste of banana, this is one not to miss out on for pancake day, for sure. Peanut butter is also something you can add to your recipe mix to make the actual pancakes have that hint of peanut butter goodness. Another alternative (as we know banana is not for everyone!) is apple – we honestly think the perfect combo of peanut butter and fruit is just delicious.
One of our favourite pancake toppings for the savoury lovers out there is the standard ham and cheese – doing it the French way, for sure. Whether you’re a smoked or unsmoked ham lover, combined with plenty of cheese melted between the hot layers of pancake goodness, this is one topping that shouldn’t be slept on, trust us.
With lemon and sugar being the perfect topping for a traditional pancake, you can’t go wrong with the sweetness these ingredients bring on top of a perfectly made pancake. A staple everyone always has in the house, why not add lemon and sugar to your pancakes to do pancake day on a budget and still have a super tasty treat.
