Veganuary has become a really popular food trend, encouraging people to change their diets and explore meals they may have never even thought of before. There’s so many options out there, but we’ve picked 4 of our favourite meals that we’re making this month to do our bit.
We are all about getting a good curry dish in the winter, to keep us full and warm in the cold. Lentils are a great alternative, and there are few things better than a smooth creamy coconut base for a curry. You can pair it with rice, or get some naan for dipping, and voila! You can make it in about half an hour, and if you plan accordingly, make extras for some meal prep through the week too. Organised much?
We all need a strong pasta dish to fall back on, and this might be our new favourite. Creamy, colourful, and you can jazz it up with extras or keep it simple, whatever you’re in the mood for. We tend to lean for a green pesto, but we respect those who prefer a red, and we’ve been adding in some chopped tomatoes, some rocket, and some crispy tofu on top just to really pull it all together. We’re making ourselves hungry now…
If you’re looking for an easy but tasty midday meal, or for a side option of an evening, this is our favourite shout. Tofu can get a bad rep, but when you know what you’re doing with it, we promise, it’s absolutely delicious. Our two top tips – marinade it to really maximise flavour, and crisp it up for the best texture. If you underseason and undercook, we can’t lie, it’s really not the best, but when you tackle it right, it’s an incredible source of protein and a tasty alternative to almost any meat option.
If you’ve never tried vegan brownies before, you’re in for a right treat. A common misconception about the vegan diet is that you have to say goodbye to most sweet treats, but this is wrong – dark chocolate is almost always vegan(although we recommend you check the packet just incase) and there are a tonne of really decadent vegan brownie recipes out there that we think give standard brownies a run for their money. Super rich and gooey, you’ll struggle to just have one of these.
