Whether you’re looking to try something new, cut down on your meat and dairy, or just want to see what sounds good, this is the place to be. January is a great month to make a few changes to your weekly diet, especially after Christmas, and we’ve found some perfect recipes that will have you craving more.
There’s nothing like a good, warming curry in this cold weather. Sweet potato is a great addition to a curry, and we’re an absolute sucker for anything satay-flavoured. We also like to add in a bit of spinach for extra iron, and we can’t resist an onion bhaji on the side, but we highly recommend this one. It’s a super easy meal to make and one that you can customise to your tastes, which we absolutely love.
We’re an absolute sucker for mac and cheese, and a lot of people think that to get that ooey, gooey creamy consistency that we all love, you need to include dairy – but that isn’t the case. Vegan cheeses and creams have come a long way, and you can now achieve the most delicious mac and cheese while still keeping it completely vegan. Pretty good, right?
If you’re looking for a strong lunch option, or something to have on the side of your main meal, this is our current go-to. We want to issue a huge thank you to the person that started adding fruits into salads, because the griddled peach addition is one we’d have never considered before, but absolutely changed our lives when we tried it. We can’t stop making this at the moment, and again, you can really customise as you fancy with various leafy greens, seeds or nuts – we’re an advocate of croutons on every salad, too.
We all need a sweet treat as a pick-me-up here and there, and it seem hard finding something that’s vegan if you don’t know what you’re after – but vegan banana bread is a super easy recipe to make and we cannot tell you how tasty it is. We tend to use this recipe over a standard one, which tells you just how good it is. If we’re feeling fancy, we throw in a handful of dark chocolate chips, maybe some chopped nuts – we’ve recently seen someone adding caramel through their bread, and we cannot wait to give that a go!
