4 Recipes We’re Obsessed With This Summer

If there’s one thing we can’t resist, it’s a delicious new recipe that fits the season. We’re talking hearty stews and soups in the autumn, candy canes and turkey vibes in the winter – and with summer here, this season is no exception. Whether you’re looking for some week-day dinner inspiration, or just want to try something new, here are our latest go-to dishes.

Buffalo Chicken & Blue Cheese Slaw

We know that blue cheese will split the crowds, but we’re firmly on the ‘adore it’ side of the table. If it’s not quite your vibe, we get it, you can easily sub it out for a strong cheddar or just skip it altogether. These sticky chicken wings are a perfect starter if you’ve got mates visiting, or if you’ve got some hefty protein goals to hit. Slaw on the side is a great refresher to this meal, as well as the added benefit of getting your veggies in a super tasty way. Bunny Jacksons might be calling your name, but when you’ve got this at home, it’s an easy call to ignore.

Summer Couscous Salad

This is a great option for the days when it’s too hot to cook, but you still want something tasty to fill your evening. We like this recipe because it’s super easy to personalise depending on what you like, and what you’ve got hanging about in the cupboard that needs using up. Take a couscous base – we’re a fan of a Mediterranean mix, but any flavour will work – add some roasted veggies, and grill some halloumi to top it. We’ve been roasting tomatoes, chick peas, courgette, and red onion in some paprika and pepper, and we’re pretty confident in calling it an elite combo – but we’re open to hearing what mix you might use.

Pesto Pasta Salad

There’s something about pesto that just oozing with summer, so this pesto pasta salad is a perfect choice throughout the hotter months. We’ve been making big batches of it and keeping it in the fridge, ideal for a quick lunch or to pair with some freshly cooked chicken in the evening. Again, this is a really versatile dish so you can add pretty much anything you like to give it some wow – we’ve been opting for fresh and sun-dried tomatoes, spinach, rocket, mozzarella balls, and some pine nuts for that delicious crunch.

Raspberry, Pistachio, & Lemon Curd Trifles

This year, pistachio has been a HUGE hype, and we’re not ashamed to admit that we’re firmly on-board. While this isn’t quite the dubai chocolate bar, it’s an absolutely delicious combo of sweet and sharp, with the added bonus of being much better value for money. It only takes 5 minutes to put this together, and you they look super impressive in a fancy wine glass as a dessert. You’ll have your mates begging for this recipe, and we can’t blame them, we’ve not been able to keep our hands off this since we first found it.
